Spelled salad with green asparagus & feta

Ingredients

  • 125 g spelled grains
  • Salt pepper
  • 250 g green asparagus
  • 75 g sugar snap peas
  • 25 g baby spinach
  • 1 ½ sticks dill
  • 1 tablespoon orange juice
  • 1 tablespoon lemon juice
  • 1 ½ tbsp olive oil
  • 1 tablespoon walnut oil
  • 100 g feta
  • ½ bed of cress

Instructions

  • Cook the spelled grains in boiling salted water for 10 minutes.
  • Cover and leave to soak over a low flame for 30–40 minutes.
  • Peel the lower third of the asparagus and cut off the woody ends.
  • Cook the asparagus in boiling salted water for 5 minutes.
  • Wash the sugar snap peas and add to the asparagus at the last minute.
  • Cut the asparagus and snow peas into bite-sized pieces.
  • Wash the spinach and shake dry.
  • Wash the dill and pluck the tips.
  • Mix the orange and lemon juice with the oils, salt and pepper.
  • Let the spelled cool for 10 minutes and mix carefully with the salad ingredients and vinaigrette in a large bowl.
  • Crumble the feta, cut the cress from the bed and sprinkle both over the salad.
