Spice-Infused Delight: Curried Eggs

  • 2 tablespoons butter
  • ½ teaspoon onion juice
  • 1 tablespoon all-purpose flour
  • 1 teaspoon curry powder
  • ¾ cup clear stock such as chicken or vegetable
  • ½ cup cream
  • Salt and pepper to taste
  • 6 hard-boiled eggs
  • Thin squares of toast for serving

Instructions

  • In a saucepan, melt the butter over low heat.
  • Add the onion juice and cook slowly until the onion begins to color.
  • Stir in the flour and curry powder until smooth.
  • Gradually add the clear stock and cream, stirring constantly.
  • Cook the mixture for about 5 minutes, or until thickened and smooth.
  • Season with salt and pepper to taste.
  • Cut the hard-boiled eggs into halves lengthwise.
  • Arrange the egg halves in a serving dish or on individual plates.
  • Pour the curry sauce over the eggs.
  • Place the dish on the stove and heat gently for a few minutes until the eggs are thoroughly heated.
  • Serve the curried eggs on thin squares of toast.
