Spiced Pumpkin Butter

Ingredients

  • cups cooked pumpkin or 2 15-ounce cans pumpkin puree
  • cups maple syrup
  • ½ cup apple juice
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg

Instructions

  • In a medium saucepan, combine all ingredients.
  • Bring to a boil, stirring often.
  • Simmer until thickened, approximately 25 minutes.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.
