Spicy Fried Onion Rings

Fried onion rings are a cocktail treat on both sides of the border. They disappear fast when served up hot and spicy. Even though they're easy to make, they have to be fried at the last minute.

Ingredients

Makes 6 servings

  • 3 medium yellow onions cut into 1⁄4-inch slices
  • 2 cups all-purpose flour
  • 1 tablespoon purchased chili powder
  • 2 teaspoons ground cayenne
  • 2 teaspoons ground paprika
  • ½ teaspoon salt or to taste
  • Vegetable oil for deep frying

Instructions

  • Separate the onions into rings and set aside on a plate.
  • In a large bowl mix the flour, chili powder, cayenne, paprika, and salt.
  • Heat oil to a depth of about 4 inches in a heavy saucepan or deep fryer until it shimmers and a few drops of water sizzle when flicked into the oil.
  • Dredge a few onion rings at a time in the flour and fry until golden.
  • Drain on paper towels.
  • Repeat and fry the remaining onion rings.
  • Serve at once.
