Ingredients

  • 2 ripe firm avocados
  • 2 tablespoons vegetable oil
  • 3 tablespoons Tabasco sauce
  • 2 tablespoons red wine vinegar
  • 1 teaspoon coarse ground black pepper
  • 1 bulb fresh garlic minced
  • 15- ounce can of whole kernel corn drained and rinsed
  • 15- ounce can of black-eyed peas drained and rinsed
  • 15- ounce can of black beans drained and rinsed
  • 1 bunch of fresh cilantro chopped
  • 2 medium-size tomatoes cubed
  • 1 small red onion chopped

Instructions

  • Prepare Avocados:
  • Cut avocados into half-inch cubes.
  • Make Dressing:
  • In a small bowl, mix together vegetable oil, Tabasco sauce, red wine vinegar, coarse ground black pepper, and minced garlic.
  • Pour the dressing mixture over avocados and stir gently to coat.
