Ingredients

  • 75 g soft butter
  • 100 g granulated sugar
  • Zest of 1 lemon
  • 200 g flour
  • 75 ml buttermilk
  • Blackberries
  • Pineapple chunks
  • For decoration optional:
  • Buttercream equal parts soft butter and powdered sugar
  • Rolled fondant
  • Food coloring black and orange

Instructions

Prepare Batter:

  • In a mixing bowl, cream the soft butter, sugar, and lemon zest together.
  • While mixing, add the egg.
  • Gradually add half of the flour, then the buttermilk, and finally the remaining flour.
  • Be careful not to overmix, as too much air will make it harder to decorate the cupcakes.

Add Fruit:

  • Divide the batter into two parts.
  • Mix one part with the blackberries and the other with the pineapple chunks.

Preheat Oven:

  • Preheat the oven to 160°C.
  • Line a cupcake tray with cupcake liners and fill them with dollops of batter.

Bake:

  • Bake the cupcakes for 25 minutes at 160°C.
  • Let them cool completely before decorating.

Decorate:

  • For decoration, you can color the buttercream with food coloring (black and orange for Halloween).
  • Roll out black and orange fondant and cut out spooky shapes to decorate the cupcakes.
