Ingredients
- 75 g soft butter
- 100 g granulated sugar
- Zest of 1 lemon
- 200 g flour
- 75 ml buttermilk
- Blackberries
- Pineapple chunks
- For decoration optional:
- Buttercream equal parts soft butter and powdered sugar
- Rolled fondant
- Food coloring black and orange
Instructions
Prepare Batter:
- In a mixing bowl, cream the soft butter, sugar, and lemon zest together.
- While mixing, add the egg.
- Gradually add half of the flour, then the buttermilk, and finally the remaining flour.
- Be careful not to overmix, as too much air will make it harder to decorate the cupcakes.
Add Fruit:
- Divide the batter into two parts.
- Mix one part with the blackberries and the other with the pineapple chunks.
Preheat Oven:
- Preheat the oven to 160°C.
- Line a cupcake tray with cupcake liners and fill them with dollops of batter.
Bake:
- Bake the cupcakes for 25 minutes at 160°C.
- Let them cool completely before decorating.
Decorate:
- For decoration, you can color the buttercream with food coloring (black and orange for Halloween).
- Roll out black and orange fondant and cut out spooky shapes to decorate the cupcakes.
