Sunrise Canadian Bacon Muffins
For a fiery flavor, try Monterey Jack cheese with peppers in place of Swiss.
Ingredients
Makes 15 muffins
Prep: 9 min., Cook: 26 min., Bake: 20 min.
- 1 teaspoon butter or margarine
- 1 6-ounce package Canadian bacon slices, chopped
- 2⅓ cups all-purpose baking mix
- ¾ cup 3 ounces shredded Cheddar cheese, divided
- ½ cup 2 ounces shredded Swiss cheese
- 2 tablespoons chopped fresh parsley
- 1 cup milk
- ⅓ cup mayonnaise
- 1 large egg lightly beaten
Instructions
- Melt butter in a large nonstick skillet over medium-high heat.
- Add bacon; cook 5 minutes or until browned.
- Set aside.
- Combine baking mix, ½ cup Cheddar cheese, Swiss cheese, and parsley in a large bowl; make a well in center of mixture.
- Add milk, mayonnaise, and egg, stirring just until dry ingredients are moistened.
- Stir in bacon.
- Spoon into lightly greased muffin pans, filling two-thirds full.
- Sprinkle with remaining ¼ cup Cheddar cheese.
- Bake at 400° for 20 minutes or until edges are lightly browned.
- Remove from pan, and serve warm.
