Sunrise Canadian Bacon Muffins

For a fiery flavor, try Monterey Jack cheese with peppers in place of Swiss.

Ingredients

Makes 15 muffins

Prep: 9 min., Cook: 26 min., Bake: 20 min.

  • 1 teaspoon butter or margarine
  • 1 6-ounce package Canadian bacon slices, chopped
  • 2⅓ cups all-purpose baking mix
  • ¾ cup 3 ounces shredded Cheddar cheese, divided
  • ½ cup 2 ounces shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley
  • 1 cup milk
  • cup mayonnaise
  • 1 large egg lightly beaten

Instructions

  • Melt butter in a large nonstick skillet over medium-high heat.
  • Add bacon; cook 5 minutes or until browned.
  • Set aside.
  • Combine baking mix, ½ cup Cheddar cheese, Swiss cheese, and parsley in a large bowl; make a well in center of mixture.
  • Add milk, mayonnaise, and egg, stirring just until dry ingredients are moistened.
  • Stir in bacon.
  • Spoon into lightly greased muffin pans, filling two-thirds full.
  • Sprinkle with remaining ¼ cup Cheddar cheese.
  • Bake at 400° for 20 minutes or until edges are lightly browned.
  • Remove from pan, and serve warm.
