Tangy Marinated Chicken Drumettes with Asparagus

Ingredients

  • 6 chicken drumettes
  • 1 ½ pounds asparagus ends trimmed
  • Marinade
  • 3 tablespoons canola oil
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 3 heaping tablespoons shallots minced
  • 1 heaping teaspoon fresh garlic minced
  • 1 1-inch piece fresh ginger, peeled and minced
  • 1 teaspoon Creole seasoning
  • Coarse sea salt and ground black pepper to taste

Instructions

  • In a ceramic bowl, mix all ingredients for the marinade.
  • Add the chicken drumettes and let them marinate for at least 5 hours in the refrigerator.
  • Drain the chicken drumettes and discard the marinade.
  • Cook the drumettes in the preheated Air Fryer at 370°F for 11 minutes.
  • Turn over and cook for an additional 11 minutes.
  • While the chicken is cooking, add the reserved marinade to a preheated skillet.
  • Add the asparagus and cook for about 5 minutes or until cooked through.
  • Serve the air-fried chicken with the sautéed asparagus and enjoy!
