Ingredients

  • 1 package 2½ teaspoons active dry yeast
  • ¼ cup warm water 100°F to 110°F
  • cups bread flour or unbleached all-purpose flour
  • ½ teaspoon salt
  • 5 teaspoons sugar
  • 3 tablespoons milk
  • 2 large eggs lightly beaten
  • 2 tablespoons unsalted butter melted and cooled
  • 1 large egg yolk
  • 1 teaspoon water

Instructions

Prepare the Dough:

  • In a medium bowl, combine the flour, salt, and sugar.
  • Add the milk, yeast mixture, beaten eggs, and melted, cooled butter.
  • Mix until well blended.
  • Transfer the dough onto a lightly floured surface and knead it for about 5 minutes.
  • If needed, add more flour, and occasionally throw the dough forcefully onto the counter to develop elasticity.
  • The dough should be soft but not sticky.

Shape the Buns:

  • Divide the dough into 20 equal pieces, shaping each into an oval about 1½ inches in diameter.
  • Place them on an ungreased cookie sheet, slightly flattening each bun.
  • Let them rise in a warm spot (like an unheated oven) for approximately 30 minutes, allowing them to double in size.

Preheat and Glaze:

  • Preheat the oven to 350°F.
  • In a small bowl, lightly beat the egg yolk with 1 teaspoon of water.
  • Brush this egg wash over the risen buns.

Bake:

  • Place the buns in the preheated oven and bake for about 15 minutes or until they are deeply browned.

Serving:

  • Serve the Medias-Noches warm, fresh from the oven or reheat them before serving.
