Ingredients

  • 2 cups cubed fresh pineapple
  • 1 ½ cups pineapple juice chilled
  • ¼ cup cream of coconut such as Coco Lopez
  • 1 cup ice cubes
  • 1 cup vanilla fat-free frozen yogurt

Instructions

  • Place the cubed fresh pineapple into the freezer and freeze until firm, about 1 hour.
  • Remove the pineapple from the freezer and let it stand for 10 minutes.
  • Combine the chilled pineapple juice and cream of coconut in a blender.
  • With the blender on, add the frozen pineapple cubes and ice cubes, one at a time, and blend until smooth.
  • Add the vanilla fat-free frozen yogurt to the blender and process until smooth.
  • Serve immediately in glasses.
