Ingredients
- 2 cups cubed fresh pineapple
- 1 ½ cups pineapple juice chilled
- ¼ cup cream of coconut such as Coco Lopez
- 1 cup ice cubes
- 1 cup vanilla fat-free frozen yogurt
Instructions
- Place the cubed fresh pineapple into the freezer and freeze until firm, about 1 hour.
- Remove the pineapple from the freezer and let it stand for 10 minutes.
- Combine the chilled pineapple juice and cream of coconut in a blender.
- With the blender on, add the frozen pineapple cubes and ice cubes, one at a time, and blend until smooth.
- Add the vanilla fat-free frozen yogurt to the blender and process until smooth.
- Serve immediately in glasses.
