Vegetarian Cobb Salad Wraps

Ingredients
- 2 cups torn romaine lettuce
- 2 tablespoons red wine vinaigrette or Italian dressing
- 2 flour tortillas for wraps 11 to 12 inch
- ½ cup chopped tomato 1 small
- 4 teaspoons crumbled blue cheese
- 1 tablespoon chopped green onion 1 medium
- 2 slices vegetarian bacon cut into small pieces
- 1 hard-cooked egg sliced
- ½ avocado pitted, peeled and sliced
Instructions
- In large bowl, toss lettuce with vinaigrette to coat.
- Spoon lettuce evenly down center of each tortilla.
- Top each evenly with tomato, cheese, onion, bacon, egg and avocado.
- Fold opposite sides of each tortilla up toward center about 1 inch over filling (sides will not meet in center).
- Beginning at one open end, roll up each tortilla.
- Cut diagonally in half; if desired, secure with toothpick.
- Serve immediately.
Notes / Tips / Wine Advice:
Instead of a traditional wrap, try a flatbread wrap. You can find flatbread wraps near other breads at your grocery store.
