Vegetarian Minestrone Soup

Ingredients

  • 6 cups vegetable broth
  • 2 carrots – chopped
  • 2 onions – chopped
  • 3 celery ribs – chopped
  • 2 garlic cloves – minced
  • 1 zucchini – cubed
  • 1 handful fresh kale – chopped
  • ½ cup barley – dry
  • 14 ½ oz can chickpeas Or 14 ½ oz can white kidney beans – drained
  • 1 tbsp fresh parsley – minced
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 28 oz can crushed tomatoes
  • 1 tsp salt
  • ¼ tsp pepper
  • Grated cheese

Instructions

  • Combine all ingredients, excluding the grated cheese, in slow cooker
  • Cook on low 6-8 hours
  • Serve with grated cheese

Notes / Tips / Wine Advice:

Serves 6 | Total time: 6 hrs 20 mins

Variation

Add ½ cup cut green beans, ½ cup diced red pepper, 1 can of diced red tomatoes, and only 1 diced onion. Also add a mix of beans: 1 cup red kidney, ½ cup garbanzo, 2 cups white beans. Finally, blend a generous splash of soy sauce at the end to make it creamier.
