  • Allow it to rise as instructed.
  • Place an oven rack in the upper-middle position and preheat the oven to 400°F.
  • Put a pan of water on the floor of the oven.
  • Once the dough has risen, punch it down.
  • Divide it into two equal parts and roll each piece into a 16 x 4½-inch rectangle.
  • Create slits on the top surface and dust with flour.
  • Sprinkle two cookie sheets with cornmeal or all-purpose flour and place one loaf on each sheet.
  • Bake for 10 minutes.
  • Remove the water pan from the oven and continue baking for an additional 5 to 10 minutes or until the loaves are lightly browned.
