Rhubarb Cake from Phillis Pellman Good
Rhubarb brings moistness and piquancy to coffee cake. This satisfies those family members and guests who prefer a hint of rhubarb rather than the full flavor of a rhubarb pie.
Ingrediënten
- ½ cup butter or margarine
- 1 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- 2 cups plus 2 Tbsp. flour
- 1 tsp. cinnamon
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup buttermilk or sour milk
- 2 cups rhubarb finely cut
- ½ cup chopped nuts optional
- ½ cup grated coconut optional
- ½ cup raisins optional
Instructies
- Cream together butter or margarine and sugar.
- Blend in egg and vanilla.
- Mix together flour, cinnamon, soda, and salt.
- Add alternately with milk to creamed mixture.
- Stir in rhubarb and any or all of the optional ingredients, mixing thoroughly.
- Pour into a greased 9” x 13” baking pan.
- Bake at 350° for 45 minutes.
