Roasted Pumpkin Seeds

The air fryer roasts pumpkin seeds for crunchy snacking, so you can enjoy low-carb, antioxidant-rich bites for a snack on the run. If you can’t get all of the pumpkin guts off of the seeds once you’ve removed them, don’t sweat it — they are edible and add a little extra flavour!

  • 2 cups fresh pumpkin seeds
  • ¾ tablespoon butter melted
  • 1 teaspoon salt divided
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon dried dill
  • ¼ teaspoon dried chives
  • ¼ teaspoon dry mustard
  • ¼ teaspoon celery seed
  • ¼ teaspoon freshly ground black pepper

Instructies

  • Preheat air fryer at 160°C for 3 minutes.
  • In a medium bowl, toss seeds with butter and ½ teaspoon salt.
  • Place seed mixture in ungreased air fryer basket and cook for 7 minutes.
  • Using a spatula, turn seeds, then cook for an additional 6 minutes.
  • Transfer to a medium serving bowl.
  • Toss with remaining ingredients.
  • Serve.
