Air-Fried Macadamia Crusted Rack of Lamb
A succulent rack of lamb coated in a crispy macadamia nut crust, cooked to perfection in the air fryer. An easy yet elegant dish for any occasion.

Ingredients
- 800 g rack of lamb
- 30 g macadamia nuts peeled, unsalted
- 1 tbsp breadcrumbs
- 1 clove garlic finely chopped
- 1 tbsp fresh egg beaten
- 1 tbsp olive oil
- 1 whole egg whisked
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Finely chop the macadamia nuts and place them in a bowl.
- Stir in the breadcrumbs and the beaten egg.
- In a separate bowl, whisk the whole egg.
- Dip the rack of lamb into the whisked egg, allowing any excess to drip off.
- Coat the lamb with the macadamia nut mixture, pressing gently to adhere.
- Mix the chopped garlic with olive oil to create a garlic oil.
- Brush the rack of lamb with the garlic oil and season with salt and black pepper.
- Preheat the air fryer to 200°C (400°F).
- Place the coated lamb rack in the air fryer basket and cook for 15-20 minutes until golden and crispy.
- For a crunchier crust, cook for an additional 3 minutes.
- Remove from the air fryer, cover with aluminum foil, and let rest for 10 minutes before serving.
