Ingredients

  • 800 g rack of lamb
  • 30 g macadamia nuts peeled, unsalted
  • 1 tbsp breadcrumbs
  • 1 clove garlic finely chopped
  • 1 tbsp fresh egg beaten
  • 1 tbsp olive oil
  • 1 whole egg whisked
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  • Finely chop the macadamia nuts and place them in a bowl.
  • Stir in the breadcrumbs and the beaten egg.
  • In a separate bowl, whisk the whole egg.
  • Dip the rack of lamb into the whisked egg, allowing any excess to drip off.
  • Coat the lamb with the macadamia nut mixture, pressing gently to adhere.
  • Mix the chopped garlic with olive oil to create a garlic oil.
  • Brush the rack of lamb with the garlic oil and season with salt and black pepper.
  • Preheat the air fryer to 200°C (400°F).
  • Place the coated lamb rack in the air fryer basket and cook for 15-20 minutes until golden and crispy.
  • For a crunchier crust, cook for an additional 3 minutes.
  • Remove from the air fryer, cover with aluminum foil, and let rest for 10 minutes before serving.
