Roasted Vegetables

A delicious medley of vegetables with paprika, parsley, and balsamic vinegar.

Equipment

  • large pan

Ingrediënten

  • A pinch of salt
  • A pinch of black pepper
  • 2 tablespoons of chopped parsley
  • 1 tablespoon of smoked paprika
  • 2 cups of diced potatoes
  • 2 cups of diced zucchini 2 cups of mushrooms
  • 2 cups of broccoli florets
  • 1 cup of chopped onion
  • 2 tablespoons of balsamic vinegar
  • 1 cup of chopped tomatoes
  • 2 tablespoons of fresh oregano
  • 2 tablespoons of fresh thyme
  • ½ tablespoon of chopped garlic
  • 3 tablespoons of olive oil

Instructies

  • Take a large pan.
  • Add the chopped onions and olive oil into it.
  • Mix the ingredients well.
  • Add the chopped garlic into the pan.
  • Add the tomatoes, oregano, salt, black pepper, balsamic vinegar, thyme, and smoked paprika into the pan.
  • Cook the ingredients well.
  • Add the vegetables into the mixture.
  • Bake the vegetable mixture for ten to fifteen minutes.
  • Garnish the dish with chopped parsley on top.
  • Your dish is ready to be served
