Ingredients
- 1 cup chocolate chips
- 3 tablespoons light corn syrup
- ½ cup rum
- 10 ounces crushed wafers
- 1 cup powdered sugar divided
- 1 cup finely chopped peanuts
Instructions
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each interval until fully melted.
- Stir in the corn syrup and rum, mixing well.
- Add the crushed wafers, ½ cup powdered sugar, and chopped peanuts, stirring until fully combined.
- Refrigerate the mixture for 1 hour until firm.
- Use a candy scooper or teaspoon to scoop small portions and roll them into truffle balls with your hands.
- Roll each truffle in the remaining powdered sugar for a classic finish.
- Place the truffles on a baking sheet and refrigerate again until firm.
