Salsa de Jitomate para Tortas

Tomato Sauce for Tortas
This simple mild tomato sauce is used for tortas (sandwiches) called ahogadas, such as Pork Sandwiches with Tomato Sauce, and can also be added to soups or some casseroles. The sauce freezes well and it's handy to have a container or two in the freezer.

Ingrediënten

Makes about 2 cups

  • 1 pound plum tomatoes peeled and chopped
  • 2 tablespoons chopped onion
  • 1 medium garlic clove finely chopped
  • ¼ teaspoon salt or to taste
  • 2 teaspoons olive oil

Instructies

  • Put the tomatoes, onion, garlic, salt, and ¼ cup water in a blender and blend until smooth.
  • Heat the oil in a medium saucepan over medium heat until it shimmers.
  • Add the tomato mixture gently to the hot oil (to minimize splattering), and bring to a boil.
  • Reduce the heat to low, cover and cook, stirring frequently, about 12 minutes, or until the onion no longer tastes raw.

Notes / Tips / Wine Advice:

The sauce is ready to use, or cover and refrigerate up to 5 days or freeze up to 3 months.
