- 4 eggs
- 2 tablespoons scallions chopped
- 4 tablespoons ricotta cheese
- ¼ teaspoon freshly cracked black pepper
- Salt to taste
- 6 ounces prosciutto chopped
- 1 tablespoon Italian parsley roughly chopped
Instructies
- Generously grease a baking pan with olive oil.
- Whisk the eggs in a mixing bowl and add the chopped scallions, ricotta cheese, black pepper, and salt.
- Fold in the chopped prosciutto and mix until well combined.
- Spoon the egg mixture into the prepared baking pan, spreading it evenly.
- Preheat the air fryer to 360°F (182°C).
- Place the baking pan in the air fryer and cook for 6 minutes or until the omelet is set and slightly golden.
- Remove the omelet from the air fryer and garnish with freshly chopped Italian parsley.
- Serve immediately.
