Crispy Air Fryer Scotch Eggs
A crispy and flavorful twist on the classic Scotch egg! These air-fried delights wrap savory pork sausage around a hard-boiled egg, coated in crunchy pork rinds for a perfect low-carb breakfast or snack.

Ingredients
- 450 g pork sausage removed from casing
- 4 large hard-boiled eggs peeled
- 1 large egg beaten
- 1 cup crushed pork rinds
- 2 tsp Dijon mustard
- 2 tsp peeled and grated brown onion
- ¾ tbsp chopped fresh chives
- ¾ tbsp chopped fresh parsley
- ⅛ tsp ground nutmeg
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 2 tsp olive oil
Instructions
- Preheat the air fryer to 180°C (350°F) for 3 minutes.
- In a large mixing bowl, combine the sausage, mustard, onion, chives, parsley, nutmeg, salt, and black pepper.
- Divide the sausage mixture into four equal portions.
- Flatten each portion and wrap it evenly around a hard-boiled egg, ensuring the egg is fully covered.
- Dip each sausage-wrapped egg into the beaten egg, then roll in crushed pork rinds to coat.
- Lightly grease the air fryer basket with olive oil and place the Scotch eggs inside.
- Cook for 7 minutes, then gently turn and brush with a little more olive oil.
- Cook for an additional 7 minutes until golden brown and crispy.
- Transfer to a serving plate and serve warm.
