Ingredients

  • 450 g pork sausage removed from casing
  • 4 large hard-boiled eggs peeled
  • 1 large egg beaten
  • 1 cup crushed pork rinds
  • 2 tsp Dijon mustard
  • 2 tsp peeled and grated brown onion
  • ¾ tbsp chopped fresh chives
  • ¾ tbsp chopped fresh parsley
  • tsp ground nutmeg
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 2 tsp olive oil

Instructions

  • Preheat the air fryer to 180°C (350°F) for 3 minutes.
  • In a large mixing bowl, combine the sausage, mustard, onion, chives, parsley, nutmeg, salt, and black pepper.
  • Divide the sausage mixture into four equal portions.
  • Flatten each portion and wrap it evenly around a hard-boiled egg, ensuring the egg is fully covered.
  • Dip each sausage-wrapped egg into the beaten egg, then roll in crushed pork rinds to coat.
  • Lightly grease the air fryer basket with olive oil and place the Scotch eggs inside.
  • Cook for 7 minutes, then gently turn and brush with a little more olive oil.
  • Cook for an additional 7 minutes until golden brown and crispy.
  • Transfer to a serving plate and serve warm.
