Seven-Minute Icing
A commonly used recipe that measures the beating time—by hand—required for the icing to reach proper consistency.
Icing for a layer cake
Ingrediënten
- 2 egg whites unbeaten
- 1½ cups granulated sugar
- 5 Tbsp. cold water
- 1 tsp. light corn syrup
- 1 tsp. vanilla
Instructies
- Mix together egg whites, sugar, water, and corn syrup in top section of double boiler.
- Place over rapidly boiling water and beat continuously with a rotary beater for 7 minutes.
- Remove from heat.
- Stir in vanilla and continue beating until icing is able to be spread.
