Ingrediënten

MAKES 4 TO 6 SERVINGS:

  • 2 garlic cloves
  • ¼ cup finely chopped fresh flat-leaf parsley
  • Kosher or sea salt
  • Freshly ground pepper use white pepper if you have it
  • teaspoon ground sweet paprika such as Spanish smoked
  • 6 tablespoons extra-virgin olive oil
  • 5 large hard-boiled eggs thinly sliced crosswise
  • Coarsely grated carrot for garnish
  • Black or green olives preferably Spanish, for garnish

Instructies

  • In a food processor, combine the garlic, parsley, salt, pepper, and paprika.
  • With the motor running, gradually pour in the olive oil and process until the mixture is well blended.
  • Arrange the sliced eggs in a serving dish and season them with salt.
  • Pour the prepared sauce over the eggs, and then garnish with grated carrot and olives.

Notes / Tips / Wine Advice:

Refrigerate for at least 2 hours, up to overnight, and serve the dish cold.
