Smoky Ham-Style Seitan Fauxsage

This smoky, sweet ham-style seitan sausage is perfect for sandwiches, pizzas, or frittatas. All the flavor of Black Forest ham without the meat!

Equipment

Ingrediënten

  • 60 g ½ cup garbanzo or fava bean flour
  • 72 g ½ cup vital wheat gluten flour
  • 120 ml ½ cup water or vegetable broth
  • 60 ml ¼ cup canola or vegetable oil
  • 14 g 2 tablespoons packed brown sugar
  • 15 g 2 tablespoons nutritional yeast
  • 24 g 1½ tablespoons tomato paste
  • ½ –1 teaspoon liquid smoke to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon salt

Instructies

  • Preheat the oven to 350°F (180°C, or gas mark 4).
  • In a mixing bowl, combine all the ingredients until a smooth, goopy mixture forms.
  • Let the mixture rest for 5 minutes.
  • Roll the dough into a log and wrap it tightly in aluminum foil, twisting the ends securely.
  • Place the wrapped fauxsage on a baking sheet, seam side down, and bake for about 45 minutes or until firm.
  • Allow the fauxsage to cool before unwrapping.
  • Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.
