  • 1 cup elbow macaroni uncooked
  • 1 pound ground beef
  • 1 onion chopped
  • 28 ounces diced tomatoes undrained
  • 8 ounces tomato sauce
  • 1 cup frozen corn
  • 1 ½ teaspoons ground cumin
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded Mexican cheese blend

Instructies

  • Cook the elbow macaroni according to package instructions.
  • Drain well and set aside.
  • In a large soup pot, cook the chopped onion and ground beef over medium heat until the beef is no longer pink.
  • Drain excess fat.
  • Stir in the black pepper, salt, ground cumin, frozen corn, tomato sauce, and diced tomatoes.
