Ingrediënten

  • 1 pound lean ground pork
  • 4 teaspoons sweet paprika
  • ½ teaspoon hot paprika
  • ½ teaspoon salt
  • 8 large garlic cloves finely chopped
  • ¼ cup chicken broth or vegetable broth
  • 4 medium or 8 small new potatoes about 2-inch size
  • 1 tablespoon olive oil
  • 4 or 8 large eggs at room temperature

Instructies

  • In a medium bowl, combine the ground pork, sweet paprika, hot paprika, salt, chopped garlic, and broth.
  • Cover and refrigerate the mixture overnight for the flavors to marinate.
  • Place the new potatoes in a medium saucepan, cover with cold water, and add salt.
  • Bring to a simmer over low heat.
  • Cook for about 15 minutes or until the potatoes are tender when pierced with a knife.
  • Drain, let them cool slightly, then peel and set aside.
  • Heat olive oil in a medium skillet over medium heat.
  • Add the marinated pork mixture and cook, breaking up the meat as it cooks, until it’s lightly browned.
  • Use a slotted spoon to transfer the cooked pork to individual serving plates.

  • Arrange the boiled new potatoes around the cooked pork on each plate.
