Ingrediënten

  • 2- oz. package couscous uncooked
  • 2 cups cooked chicken diced
  • 1 zucchini chopped
  • 1 stalk celery thinly sliced
  • 1 carrot peeled and grated
  • 2 cups orange juice
  • ¼ cup fresh basil chopped
  • 2 green onions finely chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructies

  • In a large serving bowl, combine the uncooked couscous, diced chicken, zucchini, celery, and grated carrot.
  • Set aside.
  • In a saucepan over medium heat, bring the orange juice to a boil.
  • Stir the hot orange juice into the couscous mixture.
  • Cover the bowl tightly with plastic wrap and let it stand for 5 minutes.
  • After 5 minutes, remove the plastic wrap and sprinkle the mixture with chopped fresh basil, finely chopped green onions, salt, and pepper.
  • Gently stir the ingredients until evenly mixed.
