- 1 garlic clove minced
- 1 bell pepper chopped
- ½ pound ground beef
- ½ teaspoon Mexican oregano
- ½ teaspoon dried marjoram
- 1 teaspoon chili powder
- ½ cup refried beans
- Sea salt to taste
- Ground black pepper to taste
- ½ cup Cotija cheese shredded
- 8 roll wrappers
- Cooking oil spray
Instructies
- Preheat the Air Fryer to 395°F (200°C).
- Heat sesame oil in a nonstick skillet over medium-high heat.
- Sauté scallions, garlic, and bell pepper until tender and fragrant.
- Add ground beef, oregano, marjoram, and chili powder.
- Cook until the beef is browned, about 3 minutes.
- Stir in refried beans, salt, and black pepper until combined.
- Divide the beef and bean mixture evenly among the wrappers.
- Top each wrapper with shredded Cotija cheese, then roll them up.
- Lightly spritz the roll-ups with cooking oil on all sides.
- Place the rolls in the Air Fryer basket and cook for 11–12 minutes, flipping halfway through.
