Ingrediënten

  • 1 ½ cups store-bought tzatziki
  • 3 tablespoons coarsely chopped fresh cilantro plus extra leaves for garnish
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground coriander
  • 2 tablespoons vegetable oil
  • 1 pound boneless skinless chicken breasts
  • 1 jar 15 oz. store-bought tikka masala sauce
  • 4 large 7-inch whole-grain tortillas (fajita size)
  • ¼ English cucumber halved lengthwise and thinly sliced (about 1/2 cup)
  • ¼ small red onion finely chopped (about 1/4 cup)
  • 1 jalapeño chile finely chopped, for garnish

Instructies

  • In a medium bowl, combine tzatziki, coarsely chopped cilantro, ground cardamom, and ground coriander.
  • Add 1 to 2 tablespoons of water if needed to achieve a pourable consistency.
  • Season the sauce with salt and pepper.
  • In a medium deep skillet with a lid, heat vegetable oil over medium-high heat.
  • Season the chicken and add it to the skillet.
  • Cook until the chicken is golden brown on both sides, about 5 minutes per side.
  • Pour the tikka masala sauce over the chicken.
  • Bring it to a simmer, then cover and reduce the heat to medium-low.
  • Simmer, turning the chicken once, until it’s cooked through, about 20 to 25 minutes.
  • Transfer the chicken to a cutting board and shred it into bite-size pieces using two forks.
  • Return the chicken to the sauce to keep it warm.
  • In a skillet over high heat or over a gas flame on the stovetop, char the tortillas using tongs, turning often, for about 15 seconds per side.
  • Divide the shredded chicken among the tortillas.
  • Top with the spiced tzatziki sauce, sliced cucumber, and finely chopped red onion.
  • Garnish with cilantro leaves and the chopped jalapeño.
