Spiced Chicken Tikka Tacos

- 1 ½ cups store-bought tzatziki
- 3 tablespoons coarsely chopped fresh cilantro plus extra leaves for garnish
- ½ teaspoon ground cardamom
- ¼ teaspoon ground coriander
- 2 tablespoons vegetable oil
- 1 pound boneless skinless chicken breasts
- 1 jar 15 oz. store-bought tikka masala sauce
- 4 large 7-inch whole-grain tortillas (fajita size)
- ¼ English cucumber halved lengthwise and thinly sliced (about 1/2 cup)
- ¼ small red onion finely chopped (about 1/4 cup)
- 1 jalapeño chile finely chopped, for garnish
Instructies
- In a medium bowl, combine tzatziki, coarsely chopped cilantro, ground cardamom, and ground coriander.
- Add 1 to 2 tablespoons of water if needed to achieve a pourable consistency.
- Season the sauce with salt and pepper.
- In a medium deep skillet with a lid, heat vegetable oil over medium-high heat.
- Season the chicken and add it to the skillet.
- Cook until the chicken is golden brown on both sides, about 5 minutes per side.
- Pour the tikka masala sauce over the chicken.
- Bring it to a simmer, then cover and reduce the heat to medium-low.
- Simmer, turning the chicken once, until it’s cooked through, about 20 to 25 minutes.
- Transfer the chicken to a cutting board and shred it into bite-size pieces using two forks.
- Return the chicken to the sauce to keep it warm.
- In a skillet over high heat or over a gas flame on the stovetop, char the tortillas using tongs, turning often, for about 15 seconds per side.
- Divide the shredded chicken among the tortillas.
- Top with the spiced tzatziki sauce, sliced cucumber, and finely chopped red onion.
- Garnish with cilantro leaves and the chopped jalapeño.
