Spiced Watermelon Rind

Ingrediënten
- 5 pounds watermelon rind cut in 2” chunks, each with about a ¼” strip of pink watermelon fruit
- ½ cup salt
- 2 quarts water
- 5 cups granulated sugar
- 2 cups apple cider vinegar
- 1½ cups water
- ⅛ tsp. oil of cloves
- ⅛ tsp. oil of cinnamon
Instructies
- Place watermelon chunks in large dishpan or crock.
- Combine salt with 2 quarts of water and pour over the watermelon.
- Let set overnight.
- Drain, rinse with fresh water, and drain again.
- Place watermelon in large saucepan, add fresh water and cook until tender.
- Drain.
- Meanwhile, combine sugar, vinegar, water, and spices.
- Bring to a boil and pour over the cooked and drained watermelon.
- Let set overnight.
- Drain watermelon, reserving syrup.
- Bring to boil, pour over watermelon, and let set again overnight.
- Repeat this process for 3 days.
- On day 3, cook the watermelon and syrup together for 3 minutes.
- Then pour into hot sterilized jars.
