Ingrediënten

  • 5 pounds watermelon rind cut in 2” chunks, each with about a ¼” strip of pink watermelon fruit
  • ½ cup salt
  • 2 quarts water
  • 5 cups granulated sugar
  • 2 cups apple cider vinegar
  • cups water
  • tsp. oil of cloves
  • tsp. oil of cinnamon

Instructies

  • Place watermelon chunks in large dishpan or crock.
  • Combine salt with 2 quarts of water and pour over the watermelon.
  • Let set overnight.
  • Drain, rinse with fresh water, and drain again.
  • Place watermelon in large saucepan, add fresh water and cook until tender.
  • Drain.
  • Meanwhile, combine sugar, vinegar, water, and spices.
  • Bring to a boil and pour over the cooked and drained watermelon.
  • Let set overnight.
  • Drain watermelon, reserving syrup.
  • Bring to boil, pour over watermelon, and let set again overnight.
  • Repeat this process for 3 days.
  • On day 3, cook the watermelon and syrup together for 3 minutes.
  • Then pour into hot sterilized jars.
