Spicy Pepper Chicken Wings

- Cast iron chicken fryer or skillet

- 20 chicken wing pieces
- 1 egg white
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- ¾ cup potato starch
- Oil mister
- 2 jalapeño peppers stems removed and thinly sliced
- 2 scallions green onions, trimmed and chopped
- 2 tbsp canola oil or peanut oil
- 1 tsp salt
- ¼ tsp freshly ground black pepper
Instructies
- Preheat the air fryer to 380°F.
- Coat the air fryer basket with a thin coat of oil.
- In a medium bowl, whisk together the egg white, salt, and black pepper until foamy.
- Pat dry the chicken wings and add them to the egg white mixture.
- Coat thoroughly and marinate for up to 20 minutes.
- Move the chicken wings to a large bowl and add the potato starch.
- Dredge the wings through the potato starch until thoroughly coated.
- Shake off excess starch and add the wings into the air fryer basket.
- Lightly spray the wings with oil.
- Air fry the wings at 380°F for 25 minutes, shaking the air fryer basket every 5 minutes to ensure even cooking.
- Cook an extra 5 minutes at 400°F, or until the chicken wings are golden brown and crispy.
- For the stir-fry, heat a wok or skillet over high heat until very hot.
- Add the canola oil or peanut oil, jalapeño peppers, scallions, salt, and black pepper.
- Stir-fry for about a minute.
- Add the air-fried chicken wings to the wok or skillet and toss with the jalapeños and scallions to coat.
- Stir-fry for another minute.
- Serve hot.
