Spicy Red Bean and Meat Delight
Ingrediënten
- 1 cup Pinto beans dried (rinsed and soaked overnight)
- 5 cups Water for soaking and cooking beans
- 2 tablespoons Lard
- 1 tablespoon Bacon drippings
- 1 Onion chopped
- 12 ounces Pork sausage country-style
- 1 pound Beef coarse grind
- 4 Garlic cloves
- 1 teaspoon Anise
- ½ teaspoon Coriander seeds
- ½ teaspoon Fennel seeds
- ½ teaspoon Ground cloves
- 1 Cinnamon stick ground (1″)
- 1 teaspoon Black pepper freshly ground
- 1 teaspoon Paprika
- 1 Nutmeg ground (whole)
- 1 teaspoon Cumin
- 2 teaspoons Oregano dried (preferably Mexican)
- 4 tablespoons Sesame seeds
- 1 cup Almonds blanched (skins removed)
- 12 Whole dried red chiles
- 1 ½ cups Chile caribe
- 1 ½ ounces Milk chocolate small pieces
- 1 can Tomato paste 6 oz each
- 2 tablespoons Vinegar
- 3 teaspoons Lemon juice
- 1 Soft tortilla chopped
- Salt to taste
Instructies
- Place the rinsed beans in a bowl, add 2 to 3 cups of water, and soak overnight.
- Check occasionally and add water to keep them moist.
- Pour the soaked beans and water into a heavy saucepan, add 2 to 3 more cups of water, and bring to a boil.
- Lower heat and simmer, partially covered, for about 45 minutes until beans are cooked but still firm.
- Add water if necessary.
- Drain the beans, reserving the cooking liquid.
- In a heavy skillet, melt lard and lightly fry the beans.
- Set aside.
- In a large heavy pot, melt bacon drippings over medium heat.
- Add chopped onion and cook until translucent.
- Combine sausage and beef with spices up to oregano.
- Add this mixture to the pot, breaking up any lumps.
- Cook until the meat is well-browned.
- Add the reserved bean-cooking liquid to the pot.
- Stir in all remaining ingredients.
- Bring to a boil, then lower heat and cook, uncovered, for an additional 30 minutes.
- Stir occasionally.
- Add water if necessary to maintain a chunky soup consistency.
