Spicy Tex-Mex Beef Chili

- 3 pounds stewing beef cubed
- 1 pound chorizo Spanish sausage
- Large onion diced
- Cloves garlic minced
- Jalapeno pepper diced and peeled
- 3 tablespoons olive oil
- ½ teaspoon cayenne pepper
- 3 tablespoons chili powder
- 3 cans 15 ounces each tomato sauce
- 1 teaspoon salt
- 1 ½ cups water
- 1 can Mexican beer
Instructies
- In a large pot, heat olive oil over medium heat.
- Add stewing beef, chorizo, diced onion, minced garlic, and diced jalapeno pepper.
- Brown the mixture, stirring often.
- While the mixture is browning, add cayenne pepper and chili powder.
- Stir to combine.
- Once the meat is browned, add tomato sauce, salt, water, and Mexican beer to the pot.
- Cover and cook on low heat for 30 minutes, stirring often.
- Uncover and simmer for 2 hours, allowing the flavors to meld together.
- Serve hot with your favorite toppings.
