  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 1 garlic clove finely chopped
  • 1 ½ teaspoons finely chopped fresh thyme or 1/4 teaspoon dried thyme
  • Salt to taste
  • Freshly ground black pepper to taste

Salad:

  • About 9 cups fresh baby spinach well-washed
  • ¼ pound mushrooms rinsed, trimmed, and thinly sliced
  • ½ pound Serrano Spanish cured mountain ham or prosciutto, cut into very thin strips

Instructies
