Spiralized Potato Nest With Spicy Tomato Ketchup

The crunchiness of patatas bravas, the Spanish tapa of crusty potatoes burnished with paprika and served with aioli, is maximized in an air fryer. For these spiralized potatoes, I applied those same flavors, tossing the potatoes with hot paprika for color and flavor, but serving them with a homemade ketchup that’s equally great with plain french fries of any size and flavor.

Ingrediënten

  • 1 large russet potato about 12 ounces
  • 2 tablespoons vegetable oil
  • 1 tablespoon hot smoked paprika
  • ½ teaspoon garlic powder
  • Kosher salt and freshly ground black pepper
  • ½ cup canned crushed tomatoes
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dark brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mild hot sauce such as Cholula or Frank’s

Instructies

  • Using a spiralizer, spiralize the potato, then place in a large colander.

  • ) Rinse the potatoes under cold running water until the water runs clear.
  • Spread the potatoes out on a double-thick layer of paper towels and pat completely dry.
  • In a large bowl, combine the potatoes, oil, paprika, and garlic powder.
  • Season with salt and pepper and toss to combine.
  • Transfer the potatoes to the air fryer and cook at 400°F until the potatoes are browned and crisp, 15 minutes, shaking the basket halfway through.
  • Meanwhile, in a small blender, puree the tomatoes, vinegar, brown sugar, Worcestershire, and hot sauce until smooth.
  • Pour into a small saucepan or skillet and simmer over medium heat until reduced by half, 3 to 5 minutes.
  • Pour the homemade ketchup into a bowl and let cool.
  • Remove the spiralized potato nest from the air fryer and serve hot with the ketchup.
