- 50 g 2oz fresh gluten-free breadcrumbs
- 12 g ½oz Parmesan cheese, grated
- Salt and freshly ground black pepper
- 3 sprigs of fresh rosemary finely chopped
- 2 lamb racks each with 3 bones
- 1 tablespoon olive oil
- 1 free-range egg beaten

Instructies
- Preheat your oven to 180°C (356°F).
- In a bowl, combine the gluten-free breadcrumbs, grated Parmesan, and season with salt and freshly ground black pepper.
- Place the finely chopped rosemary on a plate.
- Press the lamb racks into the rosemary on all sides to coat them.
- Heat the olive oil in a frying pan.
- Add the lamb racks and brown them on all sides.
- While you do this, preheat a baking tray in the oven.
- Carefully, using tongs, dip the lamb racks into the beaten egg, ensuring they are coated, and then into the breadcrumb and Parmesan mixture.
- Place the coated racks onto the preheated baking tray.
- Bake the lamb racks in the oven for 20-25 minutes or until the coating is golden brown, and the lamb is cooked to your desired level of doneness (for medium-rare, aim for pinkness in the center).
