This delightful side dish can also shine as an appetizer.

Makes 20 squash puppies / Prep: 10 min., Fry: 6 min. per batch
- ¾ cup self-rising cornmeal
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon ground red pepper
- 6 medium-sized yellow squash cooked and mashed
- ½ cup buttermilk
- 1 small onion minced
- 1 large egg
- Vegetable oil
- ½ teaspoon salt
Instructies
- In a large bowl, combine the first 5 ingredients.
- In another bowl, stir together the mashed squash and the next 3 ingredients.
- Add this mixture to the cornmeal mixture, stirring until well blended.
- Pour vegetable oil into a deep cast-iron skillet to a depth of ½ inch.
- Heat it to 350°F.
- Drop the batter by tablespoonfuls, in batches, into the hot oil.
- Fry for about 3 minutes on each side or until they turn golden brown.
- Drain the squash puppies on paper towels and sprinkle them evenly with ½ teaspoon of salt.
