Strawberry Cake with Orange Glaze
This fresh cake is filled with chopped strawberries, lending a moistness to every bite. The orange in the glaze pairs nicely with the berry flavour. Pour a cup of tea, pull up a chair and cut yourself a slice!

For Cake
- ½ cup finely ground almond flour
- ¼ cup powdered erythritol sweetener
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- 1 ½ tablespoons butter melted
- 1 large egg
- 2 teaspoons orange zest
- ½ teaspoon unflavoured gelatin
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ cup hulled and finely chopped strawberries
For Glaze
- ¾ tablespoon butter melted
- ¼ teaspoon orange zest
- 1 tablespoon orange juice
- ¼ cup powdered erythritol sweetener
Instructies
To make Cake:
- Preheat air fryer at 150°C for 3 minutes.
- In a large bowl, combine flour, erythritol, baking powder and salt.
- Set aside.
- In a small bowl, combine butter, egg, orange zest, gelatin, vanilla, cinnamon and strawberries.
- Add to flour mixture and stir until combined.
- Spoon mixture into an ungreased pizza pan.
- Place pan in air fryer basket and cook for 10 minutes.
- Remove pan from basket and let set for about 30 minutes until cooled.
To make Glaze:
- Combine butter, orange zest, orange juice and erythritol in a small bowl.
- Add a little water if glaze is too thick and a little extra erythritol if glaze is too thin.
- Pour over cooled cake.
- Slice cake and serve.
