Stuffed Cabbage Soup

Ingrediënten

  • 1 tbsp olive oil
  • 1 ½ lbs lean ground beef Or 1 ½ lbs lean stew meat
  • 1 onion – finely chopped
  • 28 oz tomato juice Or 28 oz crushed tomatoes
  • 2 beef bouillon cubes
  • cup barley Or ⅔ cup rice – rinsed & uncooked
  • 2 tsp sugar
  • 2-3 tsp sweet paprika
  • 6-12 garlic cloves – minced
  • 1 tsp pepper
  • ¼ tsp Tabasco sauce
  • 2 lbs cabbage – coarsely chopped
  • 3 x 14 ½ oz cans beef broth

Instructies

  • Warm oil over medium heat in saucepan, and
  • Sauté beef and onions
  • Drain fat

Add to crock pot and mix:

  • Tomatoes
  • Bouillon
  • Barley
  • Sugar
  • Paprika
  • Garlic
  • Pepper
  • Tabasco
  • Add cabbage to crock pot, followed by meat and onions mixture
  • Don’t stir
  • Top with beef broth.
  • Cook on low for 8-10 hours

Notes / Tips / Wine Advice:

Serves 6 | Total time: 10 hrs 15 mins

Variation

Use ⅓ cup brown sugar, ⅓ cup lemon juice, Napa cabbage and omit Tabasco sauce. Add a bay leaf and 5-6 stems of dried thyme and only use 32 oz of broth.
