Sweet and Tangy Barbecue Sauce with Bacon

Ingrediënten

  • 5 strips bacon roughly chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 medium sweet onion diced
  • 5 garlic cloves minced
  • 3 tablespoons minced fresh thyme
  • 1 ½ cups ketchup
  • 1 ½ to mato sauce
  • ½ cup light brown sugar packed
  • ½ cup molasses
  • ¼ cup apple cider vinegar
  • 3 tablespoons dry mustard
  • 2 tablespoon ground ginger
  • 1 tablespoon ground cumin
  • 2 ½ teaspoons chili powder
  • ½ teaspoon ground cinnamon
  • Salt and pepper to taste

Instructies

  • Cook bacon until crispy and browned, about 5 minutes.
  • Place on a plate and drain all but 2 tablespoons of fat drippings.
  • Add oil to pan over medium-high heat.
  • Add garlic and onion.
  • Sauté for 4 minutes and season it with salt and pepper.
  • Stir in thyme and cook stirring for 2 minutes.
  • Add cooked bacon along with the remaining sauce ingredients.
  • Stir well and simmer over medium-low heat for 30-40 minutes, stirring occasionally.
  • Puree sauce in a blender until smooth.
