Ingredients

  • 1 kg caster sugar
  • 1 tin condensed milk
  • 250 g unsalted butter
  • 300 ml hot water

Instructions

  • Place all the ingredients in a large, heavy-based saucepan.
  • Bring the mixture to the boil, stirring occasionally.
  • Once boiling, cook rapidly for 5 minutes.
  • Turn the heat down and gently simmer, stirring from time to time, until the mixture turns a deep golden brown (this may take 20-30 minutes).
  • While the mixture is simmering, line a baking dish with baking parchment.
  • Remove the saucepan from the heat and beat the mixture vigorously with a wooden spoon for 10 minutes.
  • This is a tough task, best done in a cool area (such as outside the kitchen).
  • Beat until the mixture feels stiff and gritty but is still pourable.
  • Pour the mixture into the prepared baking dish.
  • After 20 minutes, score the tablet into squares.
  • Leave the tablet to fully set, preferably overnight.
  • Once set, store in an airtight container.
