- 1 Tablespoon Chili Powder
- 1 Tablespoon Cumin
- 1 Tablespoon Smoked Paprika
- 1 10-Ounce Can Diced Tomatoes With Green Chilies, Drained
- 1 15-Ounce Can Black Beans, Drained And Rinsed
- 1 Cup Frozen Corn
- Juice Of 1 Medium Lime
Instructies
- Heat Rice In Microwave According To Package Directions.
- Set Aside.
- Heat A Large Skillet Over High Heat.
- When Hot, Add Butter, Garlic, Onions, Peppers, And ½ Teaspoon Salt.
- Sauté Until Vegetables Soften, About 3–4 Minutes.
- Add Chili Powder, Cumin, And Paprika.
- Stir And Cook For 1 Minute Before Adding Tomatoes, Beans, And Corn.
- Cook For 3 Minutes.
- Add The Rice And Remaining 1 Teaspoon Salt.
- Stir Well And Coat The Rice With The Seasonings.
