- 1 zucchini sliced
- 2 cups frozen corn with diced peppers and onions thawed
- 15- oz. can black beans drained and rinsed
- 2 cups cooked rice
- ½ cup salsa
- 1 teaspoon chili powder
Garnish:
- 1 cup shredded Mexican-blend cheese
- chopped fresh cilantro
Instructies
- Heat oil in a skillet over medium heat.
- Sauté sliced smoked chicken sausage, zucchini, and corn in oil for about 8 minutes or until vegetables are cooked and heated through.
- Stir in black beans, cooked rice, salsa, and chili powder.
- Cook, stirring occasionally, for 5 minutes or until the mixture is hot.
- Garnish the Tex-Mex Smoked Sausage Skillet with shredded Mexican-blend cheese and chopped fresh cilantro just before serving.
