  • 2 teaspoons oil
  • 14- oz. package smoked chicken sausage sliced 1/2-inch thick
  • 1 zucchini sliced
  • 2 cups frozen corn with diced peppers and onions thawed
  • 15- oz. can black beans drained and rinsed
  • 2 cups cooked rice
  • ½ cup salsa
  • 1 teaspoon chili powder

Garnish:

  • 1 cup shredded Mexican-blend cheese
  • chopped fresh cilantro

Instructies

  • Heat oil in a skillet over medium heat.
  • Sauté sliced smoked chicken sausage, zucchini, and corn in oil for about 8 minutes or until vegetables are cooked and heated through.
  • Stir in black beans, cooked rice, salsa, and chili powder.
  • Cook, stirring occasionally, for 5 minutes or until the mixture is hot.
  • Garnish the Tex-Mex Smoked Sausage Skillet with shredded Mexican-blend cheese and chopped fresh cilantro just before serving.
