Thanksgiving-Leftover Monte Cristo

Thanksgiving-Leftover Monte Cristo

While I’ve never gotten the whole idea of taking Thanksgiving leftovers and coming up with new ways to eat them in the post-feast days (I’m too tired to cook MORE), this sandwich is definitely something I can support. To assemble, it only takes the effort that I’d normally put toward microwaving a plate of leftovers, but in the air fryer, I can crisp up the edges and get it all melty and hot without having to stand over the stove or wait for it to cook for 30 minutes in the oven. With a sandwich this delicious and fast, I get it now.

Ingrediënten

  • 2 tablespoons cranberry sauce
  • 2 thick 1-inch slices country white or sourdough bread
  • ½ cup leftover mashed potatoes
  • 2 thick slices leftover cooked turkey breast
  • ½ cup leftover cooked green beans
  • cup leftover stuffing
  • 2 slices Swiss cheese
  • 1 tablespoon unsalted butter at room temperature
  • ½ cup milk
  • 2 large eggs lightly beaten
  • Kosher salt and freshly ground black pepper
  • Powdered sugar for dusting
  • cup leftover gravy

Instructies

  • To assemble the sandwich, spread the cranberry sauce on one slice of bread, then layer the mashed potatoes, turkey, green beans, stuffing, and cheese on top of it.
  • Spread the butter on the second slice of bread and place on top of the cheese, butter-side down.
  • Press lightly on the sandwich to compress.
  • In a pie dish, combine the milk and eggs and season with salt and pepper.
  • Dip the sandwich in the custard, flipping to make sure it soaks in both sides, then transfer the sandwich to the air fryer.
  • Cook at 375°F until the sandwich is golden brown and warmed throughout, about 12 minutes.
  • Transfer the sandwich to a cutting board, halve diagonally, and dust with powdered sugar.
  • Serve hot with a small bowl of warmed leftover gravy for dipping.

Notes / Tips / Wine Advice:

This sandwich archetype works great with other fillings as well. Instead of mashed potatoes, green beans, and stuffing, substitute cooked bacon and sliced avocado for a club, or leftover roasted veggies and mozzarella. Use whatever leftovers you have to make your favorite combination.
