Tomato and Spinach Frittata

Equipment

Ingrediënten

  • 5 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup fresh baby spinach leaves
  • 1 large spring onion peeled and diced
  • 110 grams goat cheese crumbled
  • 1 large Roma tomato cored and sliced

Instructies

  • Preheat air fryer at 160°C for 3 minutes.
  • In a medium bowl, whisk together eggs, salt and pepper.
  • Stir in spinach, shallot and goat cheese.
  • Pour mixture into a cake barrel lightly greased with olive oil.
  • Place tomato slices on top.
  • Place barrel in air fryer basket and cook for 14 minutes.
  • Transfer to a cooling rack to cool for 5 minutes in cake barrel, then slice and serve warm.
