Tomato Basil Jam

Ingrediënten

  • pounds ripe tomatoes peeled
  • ¼ cup lemon juice
  • 3 tablespoons fresh chopped basil
  • 1 1.75-ounce box powdered fruit pectin
  • 3 cups sugar

Instructies

  • Chop tomatoes into small pieces.
  • Measure 3½ cups tomatoes into medium saucepan.
  • Bring to a boil, stirring often.
  • Simmer tomatoes for 10 minutes, stirring often.
  • Stir in lemon juice and basil.
  • Stir in pectin and bring to a full rolling boil, stirring constantly.
  • Add sugar and return to boil.
  • Boil hard for 1 minute.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.
