- 2½ pounds ripe tomatoes peeled
- ¼ cup lemon juice
- 3 tablespoons fresh chopped basil
- 1 1.75-ounce box powdered fruit pectin
- 3 cups sugar
Instructies
- Chop tomatoes into small pieces.
- Measure 3½ cups tomatoes into medium saucepan.
- Bring to a boil, stirring often.
- Simmer tomatoes for 10 minutes, stirring often.
- Stir in lemon juice and basil.
- Stir in pectin and bring to a full rolling boil, stirring constantly.
- Add sugar and return to boil.
- Boil hard for 1 minute.
- Ladle into clean jars and process for 10 minutes in boiling-water bath.
