Ingrediënten

  • 2 medium tomatoes finely chopped (about 1⅓ cups)
  • 2 tablespoons canned tuna in water drained and flaked
  • 2 large hard-boiled eggs coarsely chopped
  • 4 tablespoons thinly sliced red onion
  • 2 tablespoons finely chopped red bell pepper
  • 4 pitted black olives chopped
  • 2 garlic cloves finely minced
  • 1 tablespoon finely chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil fruity variety
  • 4 teaspoons white wine vinegar
  • 2 tablespoons water
  • Salt
  • Freshly ground black pepper

Instructies

  • In a medium mixing bowl, combine the finely chopped tomatoes, flaked tuna, coarsely chopped hard-boiled eggs, sliced red onion, chopped red bell pepper, chopped olives, minced garlic, and fresh parsley.
  • In a separate small bowl, whisk together the extra-virgin olive oil, white wine vinegar, water, salt, and black pepper to create the dressing.
  • Gently fold the dressing into the tomato, tuna, egg, onion, pepper, olive, garlic, and parsley mixture until thoroughly combined.
