- 2 medium tomatoes finely chopped (about 1⅓ cups)
- 2 tablespoons canned tuna in water drained and flaked
- 2 large hard-boiled eggs coarsely chopped
- 4 tablespoons thinly sliced red onion
- 2 tablespoons finely chopped red bell pepper
- 4 pitted black olives chopped
- 2 garlic cloves finely minced
- 1 tablespoon finely chopped fresh parsley
- 2 tablespoons extra-virgin olive oil fruity variety
- 4 teaspoons white wine vinegar
- 2 tablespoons water
- Salt
- Freshly ground black pepper
Instructies
- In a medium mixing bowl, combine the finely chopped tomatoes, flaked tuna, coarsely chopped hard-boiled eggs, sliced red onion, chopped red bell pepper, chopped olives, minced garlic, and fresh parsley.
- In a separate small bowl, whisk together the extra-virgin olive oil, white wine vinegar, water, salt, and black pepper to create the dressing.
- Gently fold the dressing into the tomato, tuna, egg, onion, pepper, olive, garlic, and parsley mixture until thoroughly combined.
