Ingredients

  • 1-2 Avocados cut into large chunks
  • tsp Cinnamon
  • ½ cup thick Coconut flakes
  • ½ Cucumber chopped
  • tsp Ginger powder
  • 1 Lime juiced
  • 2 small Mangoes cut into 1-inch pieces
  • 4 cups mixed Greens
  • ¼ tsp Sea salt
  • 1 tbsp Apple cider vinegar
  • ¼ cup extra virgin Olive oil

Instructions

  • Place all of the salad ingredients in a large bowl except for the coconut flakes and avocado.
  • Place all of the ingredients for the dressing in a small bowl and whisk to combine.
  • Add to the salad and toss to combine.
  • Garnish with coconut flakes and avocado chunks.
