Greek Cucumber and Yogurt Dip

Ingrediënten

  • 1 medium cucumber
  • 1 clove garlic finely chopped
  • 3 scallions finely chopped (about 1 cup)
  • 1 tsp. olive oil
  • ½ tsp. white vinegar
  • 1 tsp. finely chopped fresh dill or ½ tsp. dried dill weed
  • 1 cup 8 oz. plain, low-fat, or nonfat yogurt

Instructies

  • Peel the cucumber, cut it in half lengthwise, and scoop out and discard the seeds.
  • Cut it into small chunks.
  • In a small bowl, mix cucumber with garlic, scallions, olive oil, vinegar, and dill.
  • Add yogurt and stir gently to combine.
  • Cover the bowl and chill in the refrigerator for at least 2 hours.
