Greek Cucumber and Yogurt Dip
Ingrediënten
- 1 medium cucumber
- 1 clove garlic finely chopped
- 3 scallions finely chopped (about 1 cup)
- 1 tsp. olive oil
- ½ tsp. white vinegar
- 1 tsp. finely chopped fresh dill or ½ tsp. dried dill weed
- 1 cup 8 oz. plain, low-fat, or nonfat yogurt
Instructies
- Peel the cucumber, cut it in half lengthwise, and scoop out and discard the seeds.
- Cut it into small chunks.
- In a small bowl, mix cucumber with garlic, scallions, olive oil, vinegar, and dill.
- Add yogurt and stir gently to combine.
- Cover the bowl and chill in the refrigerator for at least 2 hours.
