Ingrediënten

  • 1 tablespoon olive oil
  • 2 large yellow onions coarsely chopped
  • 1 large green pepper coarsely chopped
  • 6 stalks celery with leaves sliced
  • Any leftover cooked vegetables corn, green beans, etc.
  • 1 can 16 oz. peeled tomatoes, crushed
  • 1 can 28 oz. diced tomatoes
  • 1 can 16 oz. beef stock (or homemade)
  • 1 to 2 tablespoons tomato paste to thicken, adjust to taste
  • 1 can 28 oz. dark red kidney beans
  • 1 can 15 oz. mixed beans (kidney, black, pinto, etc.)
  • ½ teaspoon paprika
  • 1 tablespoon crushed fresh garlic
  • 1 tablespoon Worcestershire sauce or more to taste
  • 1 tablespoon chili powder adjust to taste
  • 2 tablespoons steak sauce
  • Tabasco sauce to taste
  • Salt and freshly ground black pepper to taste
  • 1 lb. cooked lean ground beef optional

Instructies

  • In a large pot, heat olive oil over medium heat.
  • Add onions, green pepper, and celery with leaves.
  • Cook for about 5 minutes until softened.
  • Add any leftover cooked vegetables, peeled and crushed tomatoes, diced tomatoes, beef stock, tomato paste, drained kidney beans, mixed beans, paprika, garlic, Worcestershire sauce, chili powder, steak sauce, Tabasco sauce, salt, and pepper to the pot.
  • Bring the chili to a boil, then reduce the heat and simmer for at least 1 hour, stirring occasionally.
  • Adjust seasoning to taste, adding more chili powder, Worcestershire sauce, Tabasco sauce, salt, or pepper as needed.
  • Serve hot with your choice of condiments such as cooked spaghetti noodles or rice, shredded cheddar cheese, sour cream, jalapeno peppers, and a side of moist cornbread.
